Our Coffee
What kind of coffee do you make?
We make one coffee. It is a medium-dark German-Norwegian style roast made from 100% Colombian Supremo Arabica beans. The flavor is balanced and traditional, without the sharp or burnt edges found in most commercial coffee.
Do you offer more than one roast?
No. We make one signature roast and nothing else.
Why only one roast?
We would rather do one thing correctly than do many things adequately. Roasting a single coffee in cast iron lets us keep the result consistent from batch to batch. Most customers find it is the only roast they need.
What does it taste like?
It is smooth and full bodied with a clean finish. Customers most often describe it as smooth, low in acid, and not bitter. It tastes like coffee rather than like a flavor profile.
Is it a light, medium, or dark roast?
Medium-dark. It sits between the two, which is why it works in a drip machine, a press, or an espresso machine without tasting thin or scorched.
What is a German-Norwegian style blend?
It refers to the roasting approach rather than the origin of the beans. Northern European home and cellar roasting favored slow, even heat and a medium-dark finish. That is the style we follow.
Where do your beans come from?
Colombia. We buy 100% Colombian Supremo Arabica green coffee through a licensed importer.
What does Supremo mean?
Supremo is a Colombian grading term for the largest screen size of bean. Larger beans roast evenly, which matters in a cast iron roaster.
Is your coffee 100% Arabica?
Yes. There is no Robusta and no filler in our coffee.
Is your coffee a blend of several origins?
No. Every bean we roast is Colombian.
Is your coffee single origin?
Yes, in the sense that all of it comes from Colombia.
Is your coffee organic?
We are not a certified organic roaster. The coffee contains nothing but roasted coffee beans. No oils, sugars, flavorings, or additives are used at any point.
Do you sell decaf?
No. We only offer our one caffeinated roast.
Do you sell flavored coffee?
No. We do not add flavoring to our coffee.
Do you sell an espresso roast?
We do not sell a separate espresso roast, but our roast pulls well as espresso. Customers use it in home machines and moka pots regularly.
How much caffeine is in a cup?
A standard cup of drip coffee made with our roast falls in the normal range for coffee, roughly 90 to 120 milligrams per 8 ounces depending on how strong you brew it. Arabica beans carry less caffeine than Robusta.
Is your coffee low acid?
Customers consistently describe it that way. Slow, even roasting in cast iron reduces the sour and sharp notes that stand out in fast industrial roasting. We do not treat the coffee chemically to lower acidity.
Why is it less bitter than other coffee?
Bitterness usually comes from roasting too hot and too fast, which scorches the outside of the bean before the inside is done. Cast iron holds a steady temperature and roasts the bean through, so there is no burnt layer to taste.
Will it upset my stomach?
Most customers who have trouble with acidic coffee report no issue with ours. We cannot make a medical claim. If you are sensitive, start with a smaller amount and see how it sits.
Does the coffee change from batch to batch?
The roast profile stays the same. Green coffee is an agricultural product, so there can be small seasonal differences in the beans themselves, but we roast to the same finish every time.
How We Roast
How do you roast your coffee?
In a traditional cast iron roaster. The heavy iron holds heat steady and transfers it evenly, which produces the rich, old-world flavor this style is known for. It is closer to how coffee was roasted in Germany and Norway before roasting was industrialized.
Why cast iron instead of a modern roaster?
Modern drum and air roasters are built for speed and volume. Cast iron is slower and holds a more stable temperature. The slower approach develops the bean fully without scorching the surface, which is what gives the coffee its smoothness.
How large is a batch?
Small. We roast in batches rather than in a continuous production line, which is why we can keep the profile consistent and catch anything that looks off.
Do you roast to order?
We roast in small batches on a regular schedule and fill orders from recent roasts. Your coffee is not sitting in a warehouse for months.
How fresh is the coffee when it reaches me?
It ships within days of roasting in nearly all cases.
Should I let the coffee rest before brewing?
You do not need to. Freshly roasted coffee releases carbon dioxide for a few days after roasting, which some brewers notice as extra bubbling in a pour over. It does not hurt the cup.
Can I watch a roast?
Roasting happens at the shop in Cedarburg. If you are visiting and we happen to be roasting, you are welcome to watch. We do not run scheduled roasting demonstrations.
Do you roast beans for other companies?
No. We roast our own coffee only.
Do you sell green, unroasted beans?
No.
Chaff, Strands, and What You May Find in the Jar
I found a string or a hair in my coffee. What should I do?
It is almost certainly a strand of burlap or a piece of coffee husk. Our coffee arrives from Colombia in burlap sacks, and we retain more of the coffee bean chaff and skin in our roast, which can carry strands of husk. It is safe, organic, and plant based, made from jute or from the coffee bean itself. Remove it and the coffee is fine to use. If you are concerned, email us and we will send a replacement. What is chaff?
Chaff is the papery silverskin that grows on a coffee bean inside the fruit. It dries and flakes off during roasting. It is part of the coffee.
Why is there more chaff in your coffee than in other brands?
Our roast keeps more of it with the beans.
Is chaff safe to drink?
Yes. It is plant material from the coffee fruit and it does not change the taste of the cup.
There are papery flakes in the bottom of my jar. Is that a problem?
No. That is chaff. It settles at the bottom of the jar and is normal in our coffee.
My beans look oily. Is that normal?
A light sheen is normal in a medium-dark roast. Oils migrate to the surface of the bean as the roast develops. It is a sign of roast level, not of spoilage.
My grounds are not perfectly uniform. Why?
Any grinder produces a range of particle sizes. Small variation is normal and does not affect the cup at ordinary brewing strengths.
My jar smells stronger or different than the last one. What changed?
Most likely nothing. Aroma is strongest in the first week after roasting and fades gradually. A very fresh jar smells more intense than one that has been open for a few weeks.
Sizes and Ordering
How can I buy your coffee?
You can order on our website, buy from us at farmers markets, or stop by the shop in Cedarburg.
What sizes do you sell?
Online we sell the Big Hoff, a half-gallon mason jar, and the King Hoff, seven pounds in a sturdy coffee bag. At markets and at the shop we also sell a smaller Quart mason jar.
What is the Big Hoff?
A half-gallon glass mason jar of our coffee. It is our standard online size and the one most customers start with.
What is the King Hoff?
Seven pounds of coffee in a heavy coffee bag. It is meant for households that go through coffee quickly, for offices, and for anyone who wants to stock up.
Why is the Quart size not sold online?
The quart is a take-home size for markets and the shop. Shipping a jar that small does not make sense for the customer once postage is added.
How many cups do I get from a jar?
It depends on how strong you brew. Using a standard two tablespoons per cup, a half-gallon jar makes a large number of cups and will last a typical two-person household several weeks.
Why do you use mason jars?
Glass does not hold odors, does not leach anything into the coffee, and seals well. The jar keeps the coffee fresh on the counter and is worth keeping after the coffee is gone.
Can I reuse the jar?
Yes. They are standard mason jars and are dishwasher safe.
Do you take jars back or offer a refill discount?
We do not run a jar return program. Email us if you would like to ask about refills at the shop.
Do you offer samples?
We hand out samples at farmers markets and festivals. That is the easiest way to try the coffee before buying.
Do you offer a subscription?
Ordering is done per order at this time. If you want coffee on a regular schedule, email us and we will work something out.
Do you sell gift cards?
Contact us and we can arrange a gift purchase.
Can I send coffee to someone as a gift?
Yes. Enter their address as the shipping address at checkout. If you want a note included, send us a message with your order number and we will add one.
Do you sell wholesale?
We handle wholesale and bulk arrangements case by case. Email us with what you need and we will tell you what is possible.
Can my cafe, restaurant, or shop carry your coffee?
Contact us directly to discuss it.
Do you supply offices?
The King Hoff is a practical size for an office. For a recurring order, email us.
Can I order coffee for a wedding or event?
Yes. Contact us well ahead of the date so we can roast enough and get the sizes right.
Do you offer bulk or volume pricing?
The King Hoff is our best value by weight. For larger volumes, contact us.
Do you sell mugs, shirts, or other merchandise?
Merchandise comes and goes. What is available is listed on the website or on hand at the shop.
Do you sell brewing equipment?
No. We sell coffee.
Grind
Do you sell whole bean or ground?
Both. Choose whichever you prefer when you order.
Which should I buy?
Whole bean holds its aroma longer, so buy whole bean if you own a grinder. Ground is the practical choice if you do not want another step in the morning.
What grind size do you use?
A medium grind, suited to drip machines and percolators, which is how most of our customers brew.
Can I request a different grind?
Add a note to your order or email us and we will do what we can.
What grind do I need for a French press?
Coarse. If you are using our pre-ground coffee in a press, use a slightly shorter steep time to compensate.
What grind do I need for espresso?
Fine, and it should be ground immediately before pulling the shot. Buy whole bean for espresso.
How much coffee should I use per cup?
Start with two tablespoons per six ounces of water and adjust from there.
Brewing
What is the best way to brew your coffee?
However you already make coffee. It is a traditional roast and it holds up in a drip machine, a French press, a percolator, a pour over, or an espresso machine.
Does it work in a standard drip coffee maker?
Yes. That is how most of our customers brew it.
Does it work in a French press?
Yes. Use a coarse grind and steep about four minutes.
Does it work in a percolator?
Yes. This roast was made for that kind of brewing and does not turn bitter the way lighter or scorched coffee does.
Does it work in a pour over?
Yes. Use a medium grind and pour in stages rather than all at once.
Does it work in a moka pot?
Yes. Customers use it in moka pots regularly and report good results.
Does it work in an AeroPress?
Yes. Use a medium-fine grind.
Can I make cold brew with it?
Yes. Use a coarse grind, about one cup of coffee to four cups of cold water, and steep in the refrigerator for twelve to sixteen hours. Strain and dilute to taste.
Do you sell K-Cups or pods?
No. If you use a reusable pod, our ground coffee works in it.
What water temperature should I use?
Just off boiling, around 200 degrees Fahrenheit. Boiling water poured directly on the grounds will pull out harsher flavors.
Does the water matter?
Yes. Coffee is mostly water. Filtered water makes a noticeable difference if your tap water is heavily chlorinated or very hard.
My coffee tastes weak. What should I change?
Use more coffee before you change anything else. Most weak coffee is under-dosed, not under-brewed. A finer grind is the next adjustment.
My coffee tastes bitter. What should I change?
Grind coarser, shorten the brew time, or lower the water temperature. Bitterness usually means the water spent too long pulling from the grounds.
Can I reheat leftover coffee?
You can, but it will taste flat. Coffee left on a hot plate keeps cooking. Brew a smaller pot or move the coffee to a thermal carafe.
Can I use the leftover grounds for anything?
Spent grounds work in a compost pile and in garden beds. They are also useful for scrubbing a pan.
Storage and Freshness
Should I keep my coffee in the freezer?
No. The freezer introduces moisture, and moisture ruins coffee. Keep the jar on the counter or in a cool, dark cupboard.
What about the refrigerator?
Also no. A refrigerator is damp and coffee absorbs odors from everything around it.
What is the best way to store it?
Sealed, at room temperature, away from light and heat. The mason jar it came in is already the right container.
How long does the coffee stay fresh?
Whole bean holds well for several weeks after opening. Ground coffee is best within a few weeks. Sealed and unopened, it keeps considerably longer.
Is there an expiration date on the jar?
Coffee does not spoil the way perishable food does. It loses aroma and flavor over time. Older coffee is safe to drink, it simply tastes duller.
I found a jar in the back of the cupboard. Can I still drink it?
Yes, provided it stayed dry and sealed. Smell it first. If it smells like nothing, the flavor will match.
Should I keep the King Hoff in its bag?
Keep the bag closed and stored in a cool, dark place, and pour what you need into a smaller jar for daily use. That keeps most of the coffee sealed.
My jar seems to have lost its seal. Is the coffee bad?
Not necessarily. Check for moisture or off smells. If it stayed dry, it is fine. If something is wrong with a jar, contact us.
Shipping and Orders
Do you ship?
Yes. We ship anywhere in the United States.
Do you ship internationally?
Not at this time.
What does shipping cost?
Shipping is calculated at checkout based on the size of the order and the destination.
How long does shipping take?
Orders usually go out within a few business days and arrive within a normal domestic delivery window after that. Customers regularly comment on how quickly it arrives.
Will I get tracking?
Yes. Tracking is emailed to you when the order ships. Check your spam folder if you do not see it.
How do you pack glass jars for shipping?
Each jar is wrapped and packed to absorb impact. Breakage is rare, and when it does happen we replace the jar.
My jar arrived broken. What should I do?
Send us a photo in reply to your order confirmation and we will replace it. This can happen in shipping even with extremely well packed boxes.
My order has not arrived. What should I do?
Check the tracking first, since most delayed packages are still moving. If tracking has stalled or shows delivery you did not receive, email us and we will sort it out.
I received the wrong item. What now?
Email us with your order number and we will correct it.
Can I change or cancel my order?
Contact us as soon as possible. If the order has not shipped, we can usually change it.
Can I add to an order I already placed?
Email us before it ships and we will try to combine them.
Do you offer local pickup?
You can buy directly at the shop in Cedarburg. If you would like to arrange a pickup for a larger order, contact us first.
What payment methods do you accept?
Standard credit and debit cards are accepted at checkout on the website. At markets and the shop we accept cards and cash.
Is my payment information secure?
Payments are processed through a secure payment processor. We do not store card numbers.
Do you accept returns?
Coffee is a food product, so we do not resell returned coffee. If there is a problem with your order, tell us and we will make it right.
What if I do not like the coffee?
Email us. We would rather hear about it than have you stuck with a jar you will not drink.

The Name and the Business
What does Der Hoffskeller mean?
It translates roughly to farm cellar. Hoff means farm in Old Norse and Keller means cellar in German. It fits, because our shop in Cedarburg is in the basement of a barn, and the look is inspired by the old German Rathskellers.
How do you pronounce it?
Der Hoff-skeller, with the emphasis on Hoff.
Why the German and Norwegian influence?
It reflects both the roasting tradition we follow and the heritage of this part of Wisconsin.
Are you a small operation?
Yes. We roast in small batches, sell at markets ourselves, and pack the orders that go out the door.

Ingredients and Dietary Questions
What is in your coffee?
Roasted coffee beans. Nothing else.
Is it gluten free?
Coffee beans contain no gluten. We do not add anything to the coffee.
Is it vegan?
Yes. It is a roasted plant seed with nothing added.
Are there allergens?
We do not add nuts, dairy, soy, or flavorings to our coffee. If you have a severe allergy and need details about our facility, email us and we will answer honestly.
Is there sugar in it?
No.
Can I drink it while pregnant?
That is a question for your doctor. Our coffee has a normal caffeine content for Arabica coffee.
How We Compare
How is your coffee different from grocery store coffee?
Grocery store coffee is roasted fast, in enormous volume, and often sits for months before it is opened. It is usually blended from multiple origins and grades. Ours is one origin, roasted slowly in cast iron in small batches, and sold soon after roasting.
How is it different from a specialty or third wave roaster?
Specialty roasters usually roast light to bring out the acidity and fruit notes in a particular lot. We roast medium-dark for a smooth, traditional cup. Different goal, different result.
Why does your coffee cost more than a can from the store?
We buy high grade Colombian Supremo, roast it slowly in small batches, and package it in glass. None of that is the cheap way to do it. The price reflects the coffee and the process.
Is it worth the price?
Per cup it costs less than most people expect, and considerably less than a daily drink from a cafe. Try a smaller size first if you want to decide for yourself.
Do your prices change?
Green coffee is a commodity and its price moves. We hold our prices steady as long as we reasonably can. Current pricing is always on the website.
Do you run sales?
Occasionally. Anything we run is announced on the website and social media.
Coffee Questions in General
What is the difference between Arabica and Robusta?
Arabica grows at higher elevation, tastes smoother, and carries less caffeine. Robusta is hardier, cheaper, more bitter, and higher in caffeine. It is common in low cost blends and instant coffee. We use only Arabica.
Does dark roast have more caffeine than light roast?
No. Roasting burns off a small amount of caffeine, so darker roasts have marginally less by bean. Measured by weight the difference is minor. How you brew matters far more than roast level.
What makes coffee acidic?
Natural acids in the bean, chiefly chlorogenic acids, which break down as the roast develops. A longer, more even roast leaves fewer of them, which is why our coffee reads as low acid to most people.
What is the bloom when I pour water on the grounds?
Carbon dioxide escaping the coffee. Fresh coffee blooms more. It is a sign the coffee was roasted recently.
What is crema?
The layer of foam on an espresso shot, made of dissolved gas and oils. Fresher coffee produces more of it.
Does grind size really matter?
More than almost anything else. Grind size controls how fast water pulls flavor from the coffee. Too fine and it turns bitter, too coarse and it turns weak.
Why does coffee taste different from one cup to the next?
Water, grind, dose, temperature, and how clean the equipment is. Coffee is sensitive to all of it.
Is coffee good for you?
Research generally finds that moderate coffee consumption fits fine in a normal diet. We roast coffee, we do not give medical advice. Ask your doctor about your own situation.
How long does a coffee plant take to produce?
Several years from planting to a first real harvest, and the tree produces for decades after that. Every bean in your jar came off a tree that someone tended for years.
Why is coffee shipped in burlap sacks?
Jute burlap breathes, which keeps green coffee from trapping moisture during a long ocean voyage. It has been the standard for well over a century because it works.
Equipment and Troubleshooting
How often should I clean my coffee maker?
Rinse the basket and carafe daily and run a full descale every month or two. Old coffee oils go rancid and will make good coffee taste bad.
My coffee suddenly tastes off. What changed?
Check the machine before you blame the coffee. Built up oils and scale are the most common cause of a sudden change in taste.
Paper filter or metal filter?
Paper produces a cleaner cup and holds back oils. Metal lets the oils through for a heavier body. Both work with our roast.
Does the type of grinder matter?
A burr grinder produces an even grind. A blade grinder chops unevenly, which gives you bitter fines and weak chunks in the same cup. A burr grinder is the single best upgrade for most home brewers.
How soon should I drink coffee after brewing?
Soon. Flavor drops off noticeably after about thirty minutes on a hot plate.
Why does my espresso run too fast or too slow?
Grind size and tamp pressure. Too fast means grind finer. Too slow means grind coarser. Adjust one thing at a time.
Packaging and Waste
Is your packaging recyclable?
The mason jars are glass and endlessly reusable, which is better than recycling them. Shipping boxes are cardboard and recyclable.
What happens to the burlap sacks?
They get reused. Burlap coffee sacks are useful for garden work, storage, and plenty of other things.
Do you use plastic?
We keep it to a minimum. The jars are glass and the King Hoff comes in a coffee bag built to hold seven pounds without failing.
What do you do with the chaff from roasting?
What comes off during roasting is plant material and goes back into the ground rather than into the trash.
Gifts and Special Orders
Is coffee a good gift?
It is consumable, it does not need a size, and most people drink it. The half-gallon jar in particular tends to make an impression.
Can I include a gift message?
Send us a message with your order number and the note you want included, and we will add it.
Can you ship a gift to an address other than my billing address?
Yes. Enter the delivery address as the shipping address at checkout.
Do you do holiday orders?
Yes, and December gets busy. Order early if a package needs to arrive by a specific date.
Can you do custom labels for an event?
Ask us. Give us plenty of lead time and we will tell you what is possible.
Can I buy a case?

Buying It for the First Time
I have never tried your coffee. Where should I start?
Start with the Big Hoff in whichever form matches how you brew, ground or whole bean. If you would rather try a smaller amount first, find us at a market and pick up a quart.
Will I like it if I usually drink light roast?
Probably, though it is a different style. Light roasts are bright and acidic. Ours is smooth and rounded. Most light roast drinkers find it easy to drink even when it is not what they expected.
Will I like it if I usually drink dark roast?
Yes. It has the body dark roast drinkers want without the burnt finish.
Will I like it if I do not usually drink black coffee?
A number of customers who always used cream and sugar report drinking ours black. Try one cup black before you decide.
I am picky about coffee. Is this for me?
It depends on what you are picky about. If you want single lot micro roasts with tasting notes, we are not that. If you want a well made, consistent, traditional cup, we are.
How much should I buy the first time?
A half-gallon jar is enough to get past the novelty and see how it fits your routine.
How long will a jar last me?
For one person brewing a pot most mornings, several weeks. For a two-person household, less.
What if I open it and it is not what I expected?
Tell us. We want to hear it either way.
Iced Coffee, Cream, and Add-Ins
Does it make good iced coffee?
Yes. Brew it double strength and pour it over ice so the melt does not thin it out.
Should I use cold brew or iced brew?
Cold brew is smoother and less acidic. Iced brew is faster and keeps more aroma. Both work with our roast.
Does it take cream well?
Yes. It has enough body to stand up to milk or cream without disappearing.
Does it work for lattes and cappuccinos?
Yes. Grind fine, pull it as espresso, and it holds its own against steamed milk.
Does it work with oat or almond milk?
Yes. Barista style plant milks steam better if you are making espresso drinks.
Do I need sugar?
Most customers do not use it with our coffee, which is usually the first thing they mention. Do what you like.
Can I use it in a coffee cocktail?
Yes. Cold brew made from our roast works well in mixed drinks because it is smooth and not sharp.
Cooking with Coffee
Can I cook with your coffee?
Yes. Brewed coffee goes into chili, braises, and pan sauces. Ground coffee works in dry rubs for beef and pork.
Can I bake with it?
Yes. Strong brewed coffee deepens chocolate in cakes and brownies. A tablespoon of grounds also works in a rub or a crust.
What grind should I use for a rub?
Medium to coarse. Fine grounds can turn bitter under high heat.
Can I make coffee ice cubes?
Yes, and they keep iced coffee from watering down. Freeze leftover brewed coffee in a tray.
Can I use it for tiramisu or affogato?
Yes. Brew it strong for either one.
Markets and Events

Yes. Sampling is how most of our customers found us.
Are your market prices the same as online?
Market prices do not include shipping, which is the main difference.
Do you attend markets in winter?
The schedule thins out in the cold months. Check our posted schedule before making the trip.
Can you come to our event or market?
Send us the details. We consider new markets and events as our schedule allows.
Caffeine and Sensitivity
Is your coffee strong?
Strength is mostly about how you brew rather than the roast. Use more grounds for a stronger cup and fewer for a milder one.
I am sensitive to caffeine. What should I do?
Brew it lighter, use a smaller cup, or drink it earlier in the day. We do not offer a decaf option.
Does the roast level change how strong it tastes?
It changes the character more than the strength. Our roast tastes full without tasting sharp.
Why does your coffee not give me the jitters like other coffee?
Customers report this regularly. Arabica beans carry less caffeine than the Robusta found in many cheaper blends, and a smoother cup tends to get sipped rather than gulped. We cannot make a medical claim beyond that.
Can kids drink it?
That is a decision for parents, not for us.
How much coffee is too much?
That varies by person. Ask your doctor if you are unsure.
Travel, Camping, and Groups
Does it work for camping?
Yes. It holds up in a percolator over a fire, which is exactly the kind of brewing this roast was built for.
Can I take it in a camper or RV?

Can I bring it on a plane?
Roasted coffee travels fine in checked or carry-on luggage. Pack glass carefully.
Can I bring it to a cabin or a family gathering?
The King Hoff exists for exactly that.
How much coffee do I need for a large group?
Plan on about one pound for every forty to fifty six-ounce cups, then add extra. People drink more coffee than they say they will.
Can you help me size an order for an event?
Yes. Tell us the head count and how the coffee will be brewed and we will give you a number.
