V60 Pour Over

If Espresso is about intensity, the V60 is about transparency. Utilizing a conical paper filter and a 60-degree angle, this method allows for a high degree of control over the flow rate.
The thin paper filter removes almost all coffee oils and sediments, resulting in a “clean” cup that drinks more like tea than a traditional coffee, highlighting specific high-altitude farm characteristics.

Cortado

The Cortado consists of equal parts espresso and steamed milk. Unlike a latte, which can drown out the nuances of the bean, the Cortado acts as a flavor amplifier.
The milk is steamed to a silky microfoam, adding natural lactose sweetness and a luxurious texture that rounds off the sharp edges of the espresso without hiding the terroir.

Ristretto

The Ristretto is a “restricted” shot, using the same coffee dose as espresso but roughly half the water. By cutting the shot short, the barista avoids the more bitter and astringent compounds that emerge during the final stage of extraction.

A “Long” espresso shot. By continuing the extraction until the volume reaches 60ml+, the barista pulls out undesirable, woody tannins from the end of the cycle.
From a specialty standpoint, the Lungo is often unbalanced, though it remains a popular utility drink in some markets.

Moka Pot

The coffee preparation method that skyrocketed Italy to new coffee heights in 1933. Once people got a taste (and kick) from the pressurized extraction of this engineering marvel, they never looked back.
It doesn’t involve quite as much pressure as espresso, but more than a pour over or drip, making it the perfect middle ground for coffee lovers.

Percolated Coffee

Whether you do it on the stove, over a campfire, or in a big electric 30 cup percolator, there is no coffee superior to the percolated cup. With multiple cycles through the grounds, the coffee develops a rich and complex flavor when timed right.

As roasters of coffee ourselves, we are biased towards simple preparation methods and drinks which don’t need to disguise the natural flavor of the coffee. We use cast iron conduction heat to roast our coffee (99% of coffee is roasted primarily by convection) and while that is a discussion for another time, it ultimately create a coffee which thrives in simple expressive drinks.
