
What is the Coffee Bean Skin?
The coffee bean skin (also knows as the silverskin of chaff) is a thin film directly surrounding the coffee bean that contains minerals and is high in caffeine. Most roasters filter it out of the beans during and after roasting because it produces small flakes. However, traditional coffee roasters left it on, as it adds flavor notes and increases caffeine levels. We include the coffee bean skin too.
Coffee grows on plants as a cherry sized fruit. Each cherry contains two coffee beans. The cherries are picked and dried out, and the cherry is then washed away, leaving the bean. The skin directly surrounds the bean, and doesn’t flake off until the bean is roasted.
