When we set out to make the highest quality, best tasting coffee we could, there were a few key points we knew we had to hit. We looked around at the modern coffee industry and realized that somewhere along the line, things had gone wrong. Coffee had become an industrial product, churned out in massive stainless steel drums by the ton, or worse, turned into a pretentious, overly acidic liquid that barely tasted like the coffee our ancestors drank.

We didn’t want to reinvent the wheel; we wanted to return to the wheel’s original, rugged design. We wanted coffee in its original form the way it was roasted for hundreds of years before mass industrialization took over. We wanted the kind of coffee that fueled the minds of the 17th and 18th centuries during the Enlightenment, the kind of robust, invigorating brew that European kings once tried to ban because it sparked too much political debate in the coffee houses.

To achieve that, we had to throw out the modern rulebook. We had to build our own roasters, find the absolute best beans on earth, and rely on heritage techniques that take more time, more effort, and more patience.

POINT I: DER HOFFSKELLER FLAVOR (DARK, SOULFUL, AND BOLD)

Coffee must have lots of flavor. That sounds simple, but you would be surprised how many roasters today have forgotten this basic rule.

Right now, there is a massive trend in the coffee world leaning toward extremely light, acidic, fruit-forward coffees. Some people like light acidic coffee, but we generally preferred dark, flavorful coffee. When you drink a cup of coffee, it should taste like coffee. It shouldn’t taste like sour tea or hot lemon water. It should be rich, grounding, and deeply satisfying.

However, the problem with most dark roasts on the market is that big commercial roasters just burn the beans to a crisp. They use high heat to roast the coffee as fast as possible to save time and money, resulting in a cup that tastes like bitter ash and charcoal. We reject both the sour, under-roasted trend and the burnt, over-roasted industrial standard.

Instead, we aim for a perfectly balanced, medium-dark flavor profile. We want a cup that is remarkably strong and smooth, with absolutely zero bitterness or harsh acidity. When you take that first sip, you should get a deep, soulful flavor that coats the palate, leaves a clean aftertaste, and makes you want to immediately pour a second cup. POINT II: COLOMBIAN ARABICA SUPREMO BEANS (NO COMPROMISES)

Premium, top-quality beans are essential. You cannot roast a spectacular batch of coffee if you are starting with subpar, cheap, or blended-origin beans. A master carpenter can’t build a beautiful table out of rotten wood, and a roaster cannot pull a rich, smooth flavor out of cheap commodity coffee.

When we started out, we knew we had to find the perfect raw material. We tried beans from everywhere. We tested beans from Africa, from Asia, from Central America, and from the islands. We roasted them, brewed them, and tasted them side by side. After exhaustive trial and error, Colombian Supremo Arabica beans were our absolute favorite. So that is what we use.

Why Colombian Supremo? “Supremo” is the highest grade of coffee bean that comes out of Colombia. It refers to the physical size and quality of the bean; these are the largest, most flawless beans hand-selected from the harvest. Because they are 100% Arabica, they carry a naturally smooth, sweet, and complex profile that you simply cannot get from cheaper Robusta beans (which are often used by big brands to cut costs).

These Supremo beans are rugged enough to stand up to our unique, slow-roasting process without losing their character, yet refined enough to deliver a perfectly balanced cup every single time. We don’t cut our batches with cheaper beans. We use the best, period.

POINT III: THE GERMAN NORWEGIAN BLEND (A SPECTRUM IN EVERY JAR)

One of the most unique things about Der Hoffskeller is our roasting philosophy, which we call the “German Norwegian Blend.”

The name refers to the way Germans and Norwegians preferred their coffee in the 17th century and largely how they still prefer it today. Historically, Germans have opted for a darker, heavier roast, while Norwegians have preferred a lighter, brighter variety. Usually, a coffee company will roast a dark batch, then roast a separate light batch, and mix them together in a bin. We don’t do that.

We roast our blend all at once, in the exact same batch. We achieve this by carefully managing the heat and intermittently releasing beans throughout the roasting process. As the beans tumble in the cast iron, they begin to expand and crack. By the time the very first beans reach the “second crack” the stage where they become dark and oily others in the batch are still a few shades lighter.

We intermittently release beans throughout the roasting process, some lighter, and some darker by the end. We stop the roast just before the darkest beans are burned.

What this gives you is an entire spectrum of roast levels inside a single jar. A mosaic of medium, medium-dark, and dark beans. But more importantly, it is a functional. You get the higher caffeine content and subtle complexities from the lighter beans, harmoniously paired with the deep, soulful flavor and rich body of the dark beans. It creates a complete, full-bodied experience that a single-roast profile simply cannot match.

POINT IV: CAST IRON AND LOW TEMPERATURES (THE OLD WORLD WAY)

Almost all coffee today is roasted in large, industrial, stainless steel roasting machines. Stainless steel heats up incredibly fast and transfers that heat aggressively. It is great for mass production, but it is terrible for the soul of the coffee.

We roast at much lower temperatures, and we do it entirely in cast iron.

We started out by custom building 4 cast iron Dutch oven roasters. This is the way coffee was roasted for hundreds of years before industrialization took over. After a year of roasting in these, we expanded the same principles of lower temperatures and a spectrum of roast levels to a larger Turkish cast iron drum roaster that was able to achieve the same flavor with some fine tuning.

Our low temperatures prevent the scorching that ruins so many modern dark roasts. The beans are given the time they need to develop their natural sugars and oils without having their delicate exteriors incinerated. Meanwhile, the cast iron provides a warm, rich tone to the flavor profile that you simply won’t get from big stainless steel roasters. It is a labor-intensive, slow, and hands-on process. We have to watch it, smell it, and listen to the cracks. You can’t automate this kind of quality.

POINT V: RETAINING THE SKIN (NATURE’S BRILLIANCE)

Here is a fact that almost no other roaster will talk about: the skin of the coffee bean.

During the roasting process, coffee beans shed a papery outer layer known as chaff. Modern industrial roasters view this as a nuisance. Their massive machines use high-powered fans to aggressively blow all of this skin away, sending it into the trash so the final product looks perfectly uniform and sterile.

We completely disagree with this practice. Additionally, we retain some of the coffee beans’ skin.

Why? Because nature put it there for a reason, and it turns out that the skin is incredibly beneficial. The skin contains concentrated levels of caffeine, essential minerals, and vitamins. By retaining a portion of this skin in our final product, we are keeping the coffee closer to its natural, unstripped state.

Furthermore, we found that keeping some of the skin actively reduces the bitterness of the brewed coffee. It acts as a natural buffer, rounding out the edges of the flavor profile and contributing to that incredibly smooth, non-bitter finish that Der Hoffskeller is famous for. When you look at our grounds, you might see slight variations and remnants of the original bean. That isn’t a mistake; that is intentional, old-world craftsmanship that results in a healthier, smoother cup.

POINT VI: THE HOFFSKELLER HERITAGE AND THE MASON JAR

We believe that the way you package and present your coffee says a lot about your values. Der Hoffskeller is a family-owned operation. The name itself is a nod to our heritage: “Hoff” means farm in Old Norse, and a “Rathskeller” in Germany is a repurposed cellar or basement where people gather to drink and talk. Put them together, and you get a repurposed farm basement. That is exactly where our shop is—in the cozy, wood-fired basement of our 100-plus-year-old barn on Sherman Road.

Because we care about the land we farm on, we refuse to contribute to the endless cycle of plastic and foil garbage that plagues the coffee industry. We sell our coffee in sturdy, reusable glass mason jars—from half-gallon jars down to smaller pints. When you buy from us locally, you take the jar home, enjoy the coffee, and bring the jar back to be refilled. Not even recyclables pollute our peaceful country refuge. It keeps the coffee incredibly fresh, seals in the aroma perfectly, and aligns with our philosophy of returning to a simpler, more sensible time.

Making Der Hoffskeller coffee is not easy. Sourcing exclusively Colombian Arabica Supremo beans is expensive. Roasting in cast iron over low heat takes immense patience. Monitoring the batch to release beans at different intervals for the perfect German Norwegian blend requires constant vigilance.
