How Long Do Coffee Beans Last? Roast Dates, Opened Bags, Ground Coffee and Storage

Roasted coffee beans taste best in the first few weeks after roasting. Once opened, whole beans stay at peak flavor for about 1 to 3 weeks in an airtight container and ground coffee for 1 to 2 weeks, while an unopened bag keeps until its best-by date. Coffee does not spoil the way perishable food does. It goes stale: the aroma fades and the cup tastes duller.

We roast one coffee in cast iron on our family farm in Cedarburg, Wisconsin. Here is how long coffee lasts, what the dates on a package mean, and how to store it so the last cup tastes close to the first.

A shelf-life chart

These are windows for the best flavor, not safety limits. The ranges come from the National Coffee Association (NCA) and Healthline's guide to coffee shelf life.

Our own FAQ is a little more generous about our coffee: "Whole bean holds well for several weeks after opening. Ground coffee is best within a few weeks. Sealed and unopened, it keeps considerably longer." The 1 to 3 week figures describe peak flavor. After that, coffee fades slowly. It does not turn overnight.

Ground coffee always fades faster than whole bean, because grinding exposes far more of each bean to air. Freshness is counted from roasting: the NCA notes that coffee begins to lose freshness almost immediately after it is roasted.

Roast date vs best-by date

A roast date tells you when the coffee left the roaster, and flavor is counted from it. Coffee guides commonly put the peak between about five days and a month after roasting. A best-by date is the maker's own estimate of when the coffee will taste flat. One roaster we looked at dates its grocery-store bags 60 days after roasting. Neither is a safety date.

When a package shows only a best-by date, you cannot tell how long it waited in a warehouse or on a shelf. We roast in small batches on a regular schedule, and coffee ordered from us ships within days of roasting in nearly all cases. More on that in fresh roasted coffee online.

Does coffee go bad?

Not the way milk or bread does. Our FAQ puts it simply: "Coffee does not spoil the way perishable food does. It loses aroma and flavor over time." Older coffee is safe to drink. It just tastes duller.

The exception is moisture. Coffee that got wet can grow mold, so throw it out if you see mold or discoloration, or if it smells sour or musty. If it stayed dry and sealed, smell it first. If it smells like nothing, the cup will taste like nothing too.

Two things that look alarming are normal: a light sheen of oil, which comes with a medium-dark roast, and papery flakes at the bottom of the jar. The flakes are chaff, the coffee's own silverskin, and our roast keeps more of it with the beans than most.

How to store coffee

Keep it sealed, dry, at room temperature and away from light and heat. That means a cupboard, not the shelf over the stove or a sunny windowsill.

  • Use an airtight container. A Mason jar seals well and holds no odors, which is why we use them. Our FAQ: "The mason jar it came in is already the right container." The NCA prefers opaque containers because light dulls coffee, so keep a clear jar in a cool, dark cupboard.
  • Open it as little as you can. Every opening lets in fresh air.
  • Pour off a week's worth from big bags. Keep the big bag closed and, in our FAQ's words, "pour what you need into a smaller jar for daily use. That keeps most of the coffee sealed."
  • Buy whole bean if you grind at home. It holds its flavor longer. Our ground coffee is one medium-fine grind that works for every brew method, espresso included. If you prefer to scoop and brew, buy an amount you will finish in a few weeks.

Freezer and fridge

Our answer is no to both. From our FAQ: "The freezer introduces moisture, and moisture ruins coffee." And: "A refrigerator is damp and coffee absorbs odors from everything around it."

Some people freeze coffee anyway and are happy with it, and the NCA and Healthline give frozen whole beans 3 to 4 months. If you do, freeze sealed portions in truly airtight containers, take out a week's worth at a time, let it warm up before you open it, and do not put it back.

Should fresh coffee rest?

Some guides say to wait three to five days after roasting before you brew. Our FAQ says, "You do not need to." Fresh coffee gives off carbon dioxide for a few days, which shows up as extra bubbling, the bloom, when hot water hits the grounds. A lively bloom means the coffee was roasted recently, and it does not hurt the cup. Between roasting, packing and the mail, coffee from us has usually had a few days by the time you open it anyway.

How much to buy so it stays fresh

The simplest freshness rule is to buy what you will finish within a few weeks of opening. At standard strength, about 35 eight-ounce cups per pound (the Specialty Coffee Association's golden cup ratio), that is roughly a half pound or a pound for one cup a day, or a 2 lb bag for two to four cups a day, about 18 to 35 days either way (estimates; a stronger pot or a bigger mug uses more). Every size comes whole bean or ground, and shipping is free on orders of $50 or more. Our guide to how long a bag of coffee lasts has the cups and days for every size and habit.

If your habit is steady, a delivery every week, every 2 weeks or monthly keeps a fresh bag coming. You manage deliveries through a secure emailed link (skip, pause, move a date earlier or change sizes), subscriptions have a two-delivery minimum, and the half-gallon Big Hoff jar is a one-time order only. More in is a coffee subscription worth it.

“It's amazingly delicious coffee and very fresh! I'm on my second order and will probably be a lifer.”

An honest note: if you want coffee that can sit on a cabin or emergency shelf for a year, fresh-roasted beans are the wrong buy, and instant coffee or a sealed can suits that job better. We also make just one coffee, 100% Colombian Supremo Arabica roasted medium-dark, with no decaf, light roast, flavors or pods, and we ship to US addresses only.

Coffee freshness questions

How long does an opened bag of coffee last?

General guides give opened whole beans 1 to 3 weeks and opened ground coffee 1 to 2 weeks at peak flavor. Our FAQ says our whole bean holds well for several weeks after opening and our ground coffee is best within a few weeks.

Do coffee beans expire?

Not the way perishable food does. Roasted coffee loses aroma and flavor over time, but coffee that stays dry and sealed does not spoil. Throw out coffee that got wet, shows mold, or smells sour or musty.

Is coffee past its best-by date safe to drink?

A best-by date is about flavor, not safety. Our FAQ says older coffee is safe to drink and simply tastes duller, provided it stayed dry. If the aroma is gone, the flavor will be too.

Is it OK to leave coffee in a hot car?

Heat speeds up staling, so a car is a poor place to keep coffee. A sealed bag riding home on a warm afternoon is fine, but a week on the dashboard is not. Bring it inside and keep it sealed.

How fresh is your coffee when it arrives?

We roast in small batches on a regular schedule and fill orders from recent roasts, and our coffee ships within days of roasting in nearly all cases. Orders typically go out by USPS within a few business days. Delivery times are estimates, not guarantees.

The short version

Buy whole bean if you grind, buy what you will finish in a few weeks, keep it sealed in a cool, dark cupboard, and skip the freezer. For more on choosing, brewing and buying coffee, see our coffee guides.
